Every year lots of cakes are baked for Christmas celebration. But some unique nature people want something different on Christmas Eve. For those, there is a recipe for best Christmas cake ever, named Cathedral Christmas Cake.


1 cup green and red glossy cherries, mixed

1 cup pears or peaches

1 cup apricots

1 cup glossy pineapple or figs

¼ cup glace ginger

1 cup whole brazil nuts

1 cup walnut halves or pieces

1 cup plain flour

1 tsp mixed spice

4 eggs, lightly beaten

½ cup caster sugar

2 tbsp brandy


Best Christmas Cake Ever

  • First step is to preheat oven to 150°C and wrap the loaf tin with baking paper.
  • Then finely chop the dried fruit and ginger and combine them with the nuts in a bowl. Mix the plain flour and spice with the fruit.
  • In another bowl, beat the eggs with the sugar and brandy. Add them to the fruit mixture and stir well. Spread into the lined loaf tin and bake for 90 minutes.
  • To prepare the glaze, heat the apricot jam and stir in the brandy. Brush it on the top of the cake while the cake is still warm. You can store this cake in an airtight container up to a month.

This cake is best Christmas cake ever because it needs less preparation. Baking on low temperature for long time will allow its moisture to remain same as required.
